Preparation
- Preheat the oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
- Cook the sausage according to package instructions and crumble it into small pieces.
- In a mixing bowl, whisk together eggs, milk, maple syrup, vanilla extract, and salt.
- Layer half of the pancakes at the bottom of the prepared baking dish.
- Evenly distribute the crumbled sausage over the pancakes.
- Pour the egg mixture over the sausage and pancake layers.
- Add the remaining pancakes on top.
- Bake for 30–35 minutes, or until the casserole is set and the top is golden brown.
- Let it cool for a few minutes, then slice and serve warm.
