Ingredients
  

For the dessert cups
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
For the topping
  • 2 cups fresh peaches, diced
  • 1 cup whipped cream or cream cheese filling Use for topping.
  • Cinnamon for sprinkling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. Stir in the milk and melted butter until the batter is smooth. Add vanilla extract.
  4. Pour the batter into mini dessert cups, filling them halfway.
  5. Spoon the diced peaches on top of the batter.
Baking
  1. Place baking tray in the oven and bake for 20-25 minutes or until golden brown.
  2. Let the dessert cups cool slightly.
Serving
  1. Top with whipped cream or cream cheese filling.
  2. Sprinkle with cinnamon before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Prepare the batter a day ahead but add the peach topping before baking. Cups can be frozen for up to 2 months after cooling.
