Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, sugar, baking powder, and salt.
- Stir in the milk and melted butter until the batter is smooth. Add vanilla extract.
- Pour the batter into mini dessert cups, filling them halfway.
- Spoon the diced peaches on top of the batter.
Baking
- Place baking tray in the oven and bake for 20-25 minutes or until golden brown.
- Let the dessert cups cool slightly.
Serving
- Top with whipped cream or cream cheese filling.
- Sprinkle with cinnamon before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Prepare the batter a day ahead but add the peach topping before baking. Cups can be frozen for up to 2 months after cooling.
