Ingredients

Muffin Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh peaches, chopped
Crumble Topping
  • ½ cup brown sugar
  • ¼ cup rolled oats
  • ¼ cup flour
  • 1 teaspoon cinnamon
  • ¼ cup unsalted butter, cold

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining with muffin liners.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined. Do not over-mix.
  5. Gently fold in the chopped peaches to ensure they are evenly distributed.
Crumble Topping Preparation
  1. In a separate bowl, mix together the brown sugar, rolled oats, flour, cinnamon, and cold butter until crumbly.
Baking
  1. Scoop the batter into the muffin tin, filling each cup about two-thirds full, then sprinkle the crumb mixture on top.
  2. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let them cool slightly before enjoying these warm delights.

Notes

Ensure that your baking powder is fresh for the best rise, and use ripe peaches for optimal sweetness. Don’t over-mix your batter to avoid dense muffins.
