  • 4 pieces ripe peaches, pitted and sliced
  • 1 cup feta cheese, crumbled
  • ½ piece red onion, thinly sliced
  • 2 cups mixed greens (arugula, spinach, or your preference)
  • ¼ cup fresh basil, chopped
Dressing Ingredients
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil

  • ½ cup walnuts or pecans (optional) for crunch

Method
 

Preparation
  1. Wash the peaches under running water. Pat them dry, slice them in half, and remove the pits. Cut the peach halves into wedges.
  2. Slice the red onion thinly to ensure it blends well with the other textures in your salad.
Make the Dressing
  1. In a small bowl, combine the balsamic vinegar and olive oil. Whisk together until well blended.
  2. Season with salt and pepper to taste, and consider adding a drizzle of honey for extra flavor.
Combine the Salad
  1. In a large mixing bowl, add the mixed greens, sliced peaches, crumbled feta cheese, and red onion.
  2. Drizzle the dressing over the salad and gently toss to combine, ensuring everything is coated evenly.

Notes
