  • 4 pieces ripe peaches, chopped into bite-sized pieces Choose peaches that are slightly firm but yield to gentle pressure.
  • 1 cup feta cheese, crumbled
  • ½ cup red onion, thinly sliced
  • ½ cup fresh mint leaves, chopped Add just before serving.
  • ¼ cup walnuts, roughly chopped Roasted walnuts can be used for extra crunch.
Dressing Ingredients
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • to taste salt and pepper

Method
 

Preparation
  1. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to make the dressing.
  2. Chop the ripe peaches into bite-sized pieces.
Mixing the Salad
  1. In a large salad bowl, combine the chopped peaches, crumbled feta cheese, red onion, and walnuts. Gently toss the ingredients together.
  2. Pour the dressing over the salad and toss lightly again to coat.
  3. Just before serving, sprinkle the chopped mint leaves over the salad.
