  • 1 cup Greek yogurt Full-fat yields the creamiest texture; low-fat works but can be icier.
  • ½ cup creamy peanut butter Smooth/creamy gives the best texture; chunky can be used for a crunch.
  • ¼ cup honey or maple syrup Honey adds floral notes; maple syrup pairs beautifully with peanut butter.
  • ¼ cup chocolate chips Optional; mini chips or chopped chocolate recommended.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a mixing bowl, add Greek yogurt, creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and uniformly combined.
  2. If using, fold in chocolate chips, spreading the mix immediately in the prepared pan to avoid clumping.
  3. Line a small baking dish with parchment paper, pour the mixture in, and smooth the top.
  4. Place the dish in the freezer and freeze for at least 2 hours, preferably 3–4 hours, or until firm enough to slice.
  5. Use the parchment paper to lift the frozen slab out and slice into bars with a warm knife.

Notes

For best texture, press parchment directly onto slab’s surface to prevent freezer burn. Enjoy with toppings like melted chocolate, fresh fruit, or granola. Great for after-school snacks, breakfast pairings, and parties.
