- In a mixing bowl, add Greek yogurt, creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and uniformly combined.
- If using, fold in chocolate chips, spreading the mix immediately in the prepared pan to avoid clumping.
- Line a small baking dish with parchment paper, pour the mixture in, and smooth the top.
- Place the dish in the freezer and freeze for at least 2 hours, preferably 3–4 hours, or until firm enough to slice.
- Use the parchment paper to lift the frozen slab out and slice into bars with a warm knife.
Notes
For best texture, press parchment directly onto slab’s surface to prevent freezer burn. Enjoy with toppings like melted chocolate, fresh fruit, or granola. Great for after-school snacks, breakfast pairings, and parties.
