Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until combined.
- Add the eggs, milk, and vanilla extract, and stir until smooth.
Mixing
- In another bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
- Gently fold in the chopped pecans.
Baking
- Spoon the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.
Notes
For the best flavor, use fresh pecans that are finely chopped. Don’t overmix the batter to keep your muffins light and fluffy. If you want a crunchier topping, consider adding a few extra pecans on top before baking.
