  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
Wet Ingredients
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • ½ cup milk Can substitute with almond or oat milk.
  • 1 teaspoon vanilla extract

  • 1 cup chopped pecans Use fresh pecans for the best flavor.

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until combined.
  3. Add the eggs, milk, and vanilla extract, and stir until smooth.
Mixing
  1. In another bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
  2. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  3. Gently fold in the chopped pecans.
Baking
  1. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  2. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack.

Notes

For the best flavor, use fresh pecans that are finely chopped. Don’t overmix the batter to keep your muffins light and fluffy. If you want a crunchier topping, consider adding a few extra pecans on top before baking.
