  • ½ cup shredded sharp cheddar cheese Sharp or extra sharp adds flavor.
  • ¼ cup finely grated Parmesan cheese Use high-quality Parmesan for best flavor.
Pepperoni
  • 40 to 50 slices turkey or beef pepperoni Choose thicker-cut for better texture.
Seasonings
  • 1 teaspoon Italian seasoning A blend of oregano, basil, thyme, and rosemary.
  • ½ teaspoon garlic powder Provides savory flavor.
  • to taste red pepper flakes Optional for a spicy kick.
Garnish
  • 1 tablespoon fresh parsley, finely chopped Optional for color and brightness.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Line a large baking sheet with parchment paper or a silicone baking mat.
  3. Combine the shredded mozzarella, sharp cheddar, and Parmesan in a medium bowl. Mix well.
  4. Season the cheese mixture with Italian seasoning and garlic powder. If desired, add red pepper flakes.
  5. Prepare the pepperoni by cutting large slices in half.
Baking
  1. Lay the pepperoni slices in a single layer on the prepared baking sheet.
  2. Top each pepperoni slice with a generous spoonful of the cheese mixture, pressing lightly.
  3. Bake for 8 to 10 minutes until golden and crisp.
  4. Remove from the oven and let cool on the baking sheet for a few minutes. Then transfer to a wire rack.
Serving
  1. Serve warm or at room temperature, garnished with parsley if desired.

For best texture, use full-fat cheeses and avoid over crowding the baking sheet. Store leftovers in an airtight container for up to 4 days.
