  • 1/2-3/4 cup plain Greek yogurt Use full-fat for creaminess or 2% for a lighter texture.
  • to taste salt and freshly ground black pepper
  • 1-2 teaspoons lemon juice Optional — brightens the flavors.

  • chopped toasted pine nuts or sliced almonds For added crunch.

Method
 

Preparation
  1. Shred the rotisserie chicken into a bowl, removing skin if desired.
  2. Add pesto and Greek yogurt to the chicken and mix well until combined.
