  • 500 g ground meat (beef, lamb, or chicken)
  • 2 large potatoes, peeled and diced Leave skin-on for extra texture if desired.
  • 1 large onion, finely chopped
  • 2 medium tomatoes, chopped Optional to blend into a smoother sauce.
  • 2-3 green chilies, slit Adjust to your heat tolerance.
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds For flavor blooming.
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • ½ teaspoon turmeric powder
  • to taste Salt
  • 2 tablespoons cooking oil
  • as needed Water To cover the mixture.
  • to garnish Fresh cilantro, chopped

Method
 

Preparation
  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add chopped onion and sauté until golden brown.
  3. Stir in the ginger-garlic paste and sauté for a minute.
  4. Add the ground meat and cook until browned.
  5. Mix in the tomatoes, green chilies, and all the spices. Stir and let cook until tomatoes break down.
  6. Add diced potatoes and enough water to cover the mixture.
  7. Cover and simmer on low heat for about 20-25 minutes or until potatoes are tender.
  8. Adjust seasoning and cook for an additional few minutes if needed.
  9. Garnish with fresh cilantro and serve hot.

Notes

Potato Minced Meat improves in flavor after resting. Use leftovers as stuffing for omelettes or enjoy in wraps. Store in airtight container for 3-4 days in the fridge or freeze for up to 3 months.
