Ingredients
  

Main Ingredients
  • 1 cup chickpeas drained and rinsed
  • 1 cup quinoa rinsed
  • 1 cup spinach roughly chopped
  • 1 whole avocado diced
Dressing Ingredients
  • 2 tbsp olive oil
  • 1 tsp salt to taste
  • 1 tsp pepper to taste
  • 1 whole lemon for juice

Method
 

Preparation
  1. Rinse 1 cup of quinoa under cold water.
  2. Cook the quinoa in a medium saucepan with 2 cups of water, simmering for about 15 minutes until fluffy.
Mix Ingredients
  1. In a large mixing bowl, combine the cooked quinoa, chickpeas, spinach, and diced avocado.
Dress and Season
  1. Drizzle 2 tablespoons of olive oil over the mixture and squeeze the juice of 1 lemon.
  2. Add salt and pepper to taste, adjusting based on your preference.
Toss and Serve
  1. Gently toss all the ingredients until well mixed.
  2. Serve immediately or chill for about 30 minutes for a refreshing dish.

Notes

Consider adding roasted vegetables or nuts for extra flavor and crunch. You can also substitute quinoa with brown rice or couscous.
