Raspberry Sweet Rolls

Ingredients
  

For the Dough
  • 3.5 cups all purpose flour
  • ¼ cup sugar
  • 2.25 teaspoons instant yeast Yeast helps the dough become soft and fluffy.
  • ½ teaspoon salt
  • ¾ cup warm milk Use warm not hot milk.
  • ¼ cup melted butter Butter makes the dough rich and tender.
  • 1 large egg
For the Raspberry Filling
  • 1.5 cups raspberries, fresh or frozen Raspberries add a fresh, slightly tangy flavor.
  • cup sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice Lemon juice balances the sweetness of the filling.
For the Glaze
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • ½ teaspoon vanilla extract
Optional Additions
  • to taste lemon zest
  • to taste cream cheese filling
  • to taste extra raspberries for topping

Method
 

Making the Dough
  1. Mix flour, sugar, yeast, and salt in a bowl.
  2. Add warm milk, melted butter, and egg.
  3. Stir until a dough forms.
  4. Knead for 8 to 10 minutes until smooth.
  5. Place in a bowl, cover, and let it rise for 1 hour or until doubled.
Making the Filling
  1. In a pan add raspberries, sugar, cornstarch, and lemon juice.
  2. Cook for 5 to 7 minutes until thick.
  3. Let it cool completely before using.
Rolling the Dough
  1. Roll the risen dough into a rectangle.
  2. Spread the cooled raspberry filling evenly over it.
Shaping the Rolls
  1. Roll the dough tightly into a log.
  2. Cut into 9 to 12 equal pieces.
  3. Place in a baking dish.
Second Rise
  1. Cover and let the rolls rise for 30 to 40 minutes.
  2. They should become soft and puffy.
Baking
  1. Bake at 350°F (175°C) for 20 to 25 minutes until golden.
Adding the Glaze
  1. Mix powdered sugar, milk, and vanilla.
  2. Drizzle over warm rolls before serving.

Notes

Cool the filling before spreading it on dough. Roll tightly for the best swirl shape. Variations include adding cream cheese, using mixed berries, chocolate chips, or lemon zest.
