Preparation
- Preheat the oven to 400°F (200°C).
- On a large sheet pan, combine the zucchini, yellow squash, tomatoes, onions, and garlic. Drizzle with olive oil, then season with salt, pepper, oregano, and thyme. Toss to ensure all vegetables are coated.
- Arrange the vegetables in a single layer on the sheet pan.
Cooking
- Place the slices of halloumi cheese on top of the vegetables.
- Roast in the oven for about 25-30 minutes or until the vegetables are tender and the halloumi is golden brown. Monitor during the last few minutes.
Serving
- Serve warm as a main or side dish, potentially over quinoa or alongside grilled meats.
Notes
For added flavor, marinate halloumi in olive oil and herbs before adding to the vegetables. Can also be roasted in an air fryer.
