  • 1 medium onion, diced
  • 2 cloves garlic, minced Keep an eye on the garlic to prevent burning.
  • 1 medium bell pepper, chopped Any color bell pepper works.
  • 1 can (14.5 oz) diced tomatoes Canned with basil and oregano can enhance flavor.
  • 1 teaspoon Italian seasoning

  1. In a large skillet, heat olive oil over medium heat for about 30 seconds until it shimmers.
  2. Add the diced onion and bell pepper, and sauté until softened (about 4–6 minutes).
  3. Stir in the garlic and cook for another minute.
  4. Add the ground beef to the skillet and cook until browned (about 6–8 minutes), breaking it into crumbles.
  5. Drain any excess grease.
  6. Stir in the rice, beef broth, diced tomatoes (with their juices), Italian seasoning, salt, and pepper, mixing thoroughly.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes.
  8. Fluff the rice with a fork and serve warm.

Notes

You can turn this dish into stuffed peppers or a burrito bowl. Leftovers can be refrigerated or frozen for meal prep.
