  • 2 large eggs Binds everything together.
  • 1 tsp garlic powder Infuses savory flavor throughout.
  • ½ tsp onion powder A hint of sweetness and depth.
  • ½ cup shredded cheese Optional: Add extra flavor and texture.
  • ¼ cup chopped herbs Optional: Parsley or chives work beautifully.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and drain any excess moisture by squeezing it with a clean cloth.
  3. In a large bowl, combine the flour, baking powder, baking soda, salt, garlic powder, and onion powder.
  4. In another bowl, whisk together the olive oil, yogurt or sour cream, and eggs until smooth.
  5. Slowly add the wet ingredients into the dry ingredients, stirring gently.
  6. Fold in the grated zucchini, and if using, the cheese and herbs.
  7. Pour the mixture into a greased loaf pan, spreading it evenly.
Baking
  1. Place in the oven and bake for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool for a few minutes in the pan before transferring to a wire rack.

Notes

Do not overmix: Stir just until the ingredients are combined to keep the bread tender. Adjust seasoning: Feel free to increase the garlic or herbs based on your preference. Check for doneness: Always check earlier than the suggested time; ovens can vary!
