  • 2 cups chopped romaine lettuce
  • 1 cup diced tomatoes
  • ½ cup diced cucumbers
  • ½ cup chopped red onion
  • ½ cup chopped bell peppers
  • ¼ cup chopped parsley
  • ¼ cup feta cheese can substitute with goat cheese
  • ¼ cup olives
Dressing
  • ¼ cup dressing (olive oil, lemon juice, salt, and pepper to taste) adjust to taste

Method
 

Preparation
  1. Wash all the vegetables thoroughly.
  2. Chop the romaine lettuce, dice the tomatoes, cucumbers, and bell peppers, and chop the red onion and parsley.
Mixing the Salad
  1. In a large bowl, combine the chopped romaine lettuce, tomatoes, cucumbers, red onion, bell peppers, parsley, feta cheese, and olives.
Making the Dressing
  1. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to taste.
Serving
  1. Pour the dressing over the salad mixture and toss well to combine all the ingredients.
