Salad Base
  • 1 head romaine lettuce, chopped Washed thoroughly
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 medium bell pepper, diced
  • ½ medium red onion, finely chopped
  • 1 cup chickpeas, drained and rinsed
  • ½ cup feta cheese, crumbled Can substitute with dairy-free cheese
  • ¼ cup olives, sliced Mediterranean olives recommended
  • ¼ cup parsley, chopped
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar Can substitute with balsamic vinegar

  • to taste pepper Adjust according to taste

Method
 

Preparation
  1. Thoroughly wash all the vegetables. Chop the romaine lettuce and place it in a large bowl. Add the halved cherry tomatoes, diced cucumber, diced bell pepper, and finely chopped red onion.
  2. Add the drained chickpeas, crumbled feta cheese, sliced olives, and chopped parsley to the bowl.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper until well combined.
  4. Pour the dressing over the salad mixture and toss everything together gently, ensuring the ingredients are evenly coated.
  5. Serve the salad immediately for the best flavor and texture.

Notes

Using fresher ingredients will enhance the salad's taste. Chill your salad for about 10-15 minutes before serving for a refreshing touch. Feta cheese can be salty, so adjust the amount of salt you add accordingly.
