  • 1 pie crust pre-made or homemade pie crust A great time-saver if using pre-made.
  • 2 cups fresh spinach, chopped Sautéed until wilted.
  • 1 cup ricotta cheese
  • 1 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved Fold into filling gently.
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon olive oil For sautéing.
  • 2 to taste eggs Whisked into filling.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Prepare the pie crust: Fit the pre-made crust into your pie dish or roll out the dough for homemade crust and place in dish.
  3. Sauté the spinach in olive oil over medium heat until wilted, about 2-3 minutes. Allow to cool slightly.
Filling
  1. In a mixing bowl, combine ricotta cheese, feta cheese, and dill. Whisk in eggs, followed by sautéed spinach. Season with salt and pepper.
  2. Gently fold in cherry tomatoes.
Baking
  1. Pour filling into prepared pie crust and spread evenly.
  2. Bake on a baking tray for 30-35 minutes, or until center is set and top is lightly browned.
  3. Allow to cool for 10-15 minutes before slicing.

Notes

Store leftovers tightly covered in the fridge for up to three days. For freezing, slice and use an airtight container. Reheat in the oven for crispness. Optionally, prepare the filling a day in advance and bake when needed.
