Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine sliced chicken, bell peppers, onions, olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Toss until everything is evenly coated.
  4. Spread the mixture in a single layer on a sheet pan.
Cooking
  1. Bake for 20-25 minutes until the chicken is cooked through and vegetables are tender.
  2. Serve with tortillas and your choice of toppings.

Notes

For added flavor, include lime juice in the seasoning mix, or try adding cayenne for extra heat. This recipe is versatile – substitute chicken with firm tofu for a vegetarian option.
