  • 2 medium sweet potatoes, peeled or scrubbed and cut into 1-inch cubes Parboiling for 5–7 minutes can shorten roast time.
  • 2 cups broccoli florets (trimmed) Add towards the end to prevent overcooking.
  • 1 tbsp unsalted butter For sautéing garlic.
  • 4 cloves garlic, minced Watch carefully to prevent burning.
  • ¼ cup honey Provides sweetness to the glaze.
  • ¼ cup low-sodium soy sauce Can substitute with tamari for gluten-free.
  • 1 tbsp apple cider vinegar Adds acidity to balance flavors.
  • Salt and pepper to taste Adjust according to preference.
  • 2 tbsp minced fresh parsley For garnish.

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Tip: Let your baking tray heat in the oven for a couple of minutes before adding food for a better sear.
  3. Arrange sausage, sweet potatoes, and broccoli on a sheet pan.
  4. Tip: Cut sausage into 1/2-inch thick rounds and keep sweet potato pieces uniform.
  5. In a small saucepan, melt butter over medium heat, add minced garlic, and sauté until fragrant (about 30-45 seconds).
  6. Tip: Watch the garlic closely; it browns quickly.
  7. Stir in honey, soy sauce, vinegar, salt, and pepper; simmer for 2-3 minutes.
  8. Tip: For a thicker glaze, simmer a minute longer.
  9. Drizzle sauce over the sheet pan ingredients and toss to coat.
  10. Roast for 25-30 minutes or until sweet potatoes are fork-tender.
  11. Tip: Halfway through, flip the sausage and toss the vegetables.
  12. Once roasted, sprinkle with parsley and reserved sauce if desired.
  13. Tip: A squeeze of fresh lemon can brighten the dish.
