Ingredients
  

Seafood Filling
  • 1 pound shrimp, peeled and deveined
  • 1 pound crab meat, drained
  • 1 cup shredded cheese (such as cheddar or mozzarella)
  • ½ cup mayonnaise Can substitute with Greek yogurt for a healthier option.
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon Old Bay seasoning
  • ¼ cup chopped green onions
  • Salt and pepper to taste
Biscuit Dough
  • 1 package refrigerated biscuit dough

Method
 

Preparation
  1. Preheat your oven to the temperature indicated on the biscuit package.
  2. In a mixing bowl, combine the shrimp, crab meat, shredded cheese, mayonnaise, Dijon mustard, lemon juice, Old Bay seasoning, chopped green onions, salt, and pepper. Mix well until thoroughly incorporated.
  3. On a floured surface, roll out the biscuit dough to about 1/4 inch thickness.
Assembly and Baking
  1. Place a spoonful of the seafood mixture onto half of the biscuit rounds, then top them with the remaining rounds. Press the edges to seal.
  2. Arrange on a baking tray lined with parchment paper. Bake according to package instructions or until golden brown and puffy.
Serving
  1. Serve warm and enjoy with a light salad or as a hearty snack.

Notes

Leftover Shrimp Crab Biscuit Melts can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, bake in the oven for a few minutes. For make-ahead preparation, assemble and freeze before baking, then bake directly from frozen.
