  • 15 oz can of tomato sauce
  • 1 cup heavy cream For a lighter sauce, use half-and-half instead
  • 1 tablespoon dried basil Substitute with 2-3 tablespoons fresh basil added at the end for freshness
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • Parmesan cheese for serving Optional but recommended; can substitute with Pecorino Romano or Asiago

Method
 

Preparation
  1. Place the chicken breasts in the slow cooker.
  2. Pat the chicken dry before placing it in the slow cooker for better seasoning adherence.
  3. If desired, season the breasts with a pinch of salt and pepper and sear them in a hot skillet for 2 minutes per side.
  4. In a bowl, mix together the tomato sauce, heavy cream, dried basil, minced garlic, salt, and pepper until smooth.
  5. Pour the sauce mixture over the chicken in the slow cooker, ensuring the pieces are evenly coated.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 4 hours.
  2. Once cooked, shred the chicken in the sauce and serve with Parmesan cheese on top.
  3. For thicker sauce, simmer a cup of sauce in a saucepan and stir it back into the slow cooker.

Notes

For variations, add baby spinach during the last 15 minutes or red pepper flakes for extra heat. For a dairy-free option, substitute heavy cream with full-fat coconut milk.
