Mix Wet Ingredients
- In a large bowl, stir together the melted butter, the packed brown sugar, and the mashed banana until smooth.
Add Egg Yolk and Vanilla
- Mix in the egg yolk and vanilla extract into the wet mixture until fully incorporated.
Combine Dry Ingredients
- Add the flour, salt, baking soda, and cinnamon. Stir until there are no streaks of flour.
Fold in Chocolate Chips
- Gently fold in the chocolate chips until evenly distributed.
Hydrate the Dough
- Cover the bowl and set aside for about 15 minutes while the oven preheats.
Preheat Oven
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
Scoop Dough
- Scoop the dough onto the prepared cookie sheet, leaving about 2 inches between each.
Bake
- Bake for 10-11 minutes or until the edges are set but centers are still slightly underbaked.
Cool
- Allow to cool on the baking sheet for a few minutes, then transfer to a wire rack.
