  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • ¼ cup granulated sugar (for topping)
  • ¼ cup brown sugar (for topping)
  • ½ cup streusel topping (optional) Add for extra texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually mix in the dry ingredients until just combined.
  6. In a small bowl, combine the cinnamon and additional sugar for the topping.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet.
  8. Sprinkle each cookie with the cinnamon-sugar mixture and add streusel topping if desired.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. Freeze for up to three months. You can refrigerate the dough for up to 2 days before baking.
