Ingredients
  

For the filling
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened Use softened cream cheese for easier mixing.
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
For the chicken
  • 4 pieces boneless, skinless chicken breasts Make sure to cut pockets to stuff.
  • 1 tablespoon olive oil For searing the chicken.

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the chopped spinach, cream cheese, mozzarella, Parmesan, garlic, salt, and pepper.
  3. Cut a pocket in each chicken breast and stuff it with the spinach mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat.
  2. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
  3. Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
  4. Let it rest for a few minutes before serving.

Notes

Serve with a simple salad, steamed vegetables, or rice. For a cozy meal, offer chicken dumpling soup on the side.
