Preparation

- Cut a pocket in each chicken breast and stuff it with the spinach mixture.
Cooking
- Heat olive oil in a skillet over medium heat.
- Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes until cooked through.
- Let it rest for a few minutes before serving.
