Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the strawberry cake mix, vegetable oil, and eggs. Mix until well combined; the dough should be thick but smooth.
- Scoop tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
- Bake for 10-12 minutes or until the edges are lightly golden.
- Let cool before serving.
Notes
For a twist on your cookies, consider adding white chocolate chips or nuts to the dough. Store leftover cookies in an airtight container at room temperature for up to a week, or freeze for up to three months. The dough can also be made ahead and refrigerated.
