Strawberry Cheesecake Cups

Ingredients
  

Cheesecake Filling
  • 8 oz cream cheese, softened
  • ½ cup powdered erythritol (or sweetener of choice)
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
Strawberry Layer
  • 1 cup strawberries, hulled and sliced
Optional Topping
  • to taste graham cracker crumbs For topping

Method
 

Preparation of Cheesecake Mixture
  1. In a mixing bowl, beat the softened cream cheese with the powdered erythritol and vanilla extract until the mixture is completely smooth.
  2. This usually takes around 2-3 minutes of beating.
Whipping the Cream
  1. In a separate bowl, whip the heavy cream until stiff peaks form.
  2. Be careful not to overwhip it as it can become grainy.
Combining Ingredients
  1. Gently fold the whipped cream into the cream cheese mixture using a spatula.
Layering the Cups
  1. In your paper cups, start layering the cheesecake mixture followed by a layer of sliced strawberries.
  2. Alternate layers to create a beautiful presentation, and leave a bit of the cream mixture for the top.
Garnishing and Chilling
  1. Top off with additional strawberries and sprinkle with graham cracker crumbs if desired.
  2. Place the cups in the refrigerator to chill for at least an hour.
Serving
  1. After chilling, the Strawberry Cheesecake Cups are ready to serve. Enjoy them straight from the cup.

Notes

These cups can be made ahead of time. Store leftovers in the refrigerator for up to 3 days. They don't freeze well.
