  • 1 cup sweet corn (fresh or canned)
  • 1 piece cucumber, diced
Dressing Ingredients
  • ½ cup Greek yogurt Can substitute with sour cream or vegan yogurt.
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice Adjust based on desired tartness.
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • to taste Fresh cilantro for garnish (optional) Adds a refreshing herbaceous quality.

Preparation
  1. In a large bowl, combine the chopped grilled chicken, sweet corn, and diced cucumbers.
  2. In a separate bowl, mix together the Greek yogurt, mayonnaise, lime juice, chili powder, salt, and pepper.
  3. Pour the dressing over the chicken and vegetable mixture and toss to combine.
  4. Garnish with fresh cilantro if desired.
  5. Serve chilled and enjoy!
  6. Allowing the salad to rest in the fridge for a few minutes can enhance the flavor.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Prepare the salad ahead but keep the dressing separate until serving. Freezing is not recommended as vegetables may become mushy.
