  • 2 cups grilled or roasted chicken, diced Alternatively, use sliced rotisserie chicken.
  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
Dressing
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt Can be substituted with sour cream.
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Adjust to taste.
  • crumbled feta cheese (optional) For garnish.

Preparation
  1. If using grilled chicken, dice it into bite-sized pieces. Alternatively, use sliced rotisserie chicken.
  2. In a large mixing bowl, combine the diced chicken, sweet corn, cucumber, and red onion.
  3. In a separate bowl, mix together the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper until fully combined.
  4. Pour the dressing over the chicken and vegetable mixture. Gently stir to coat everything evenly.
  5. For an extra touch of flavor, garnish with crumbled feta cheese if desired.
  6. Serve immediately or chill in the refrigerator for about 30 minutes to meld flavors.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freshness is best enjoyed immediately, but it can be tasty after chilling.
