Ingredients
  

For the cookie base
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 ½ cups white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¼ teaspoon salt
For the topping
  • 1 cup frosting (cream cheese or vanilla) Homemade or store-bought
  • Assorted pieces fresh fruits (strawberries, blueberries, kiwi, etc.) Use seasonal fruits for best flavor

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the flour, baking soda, and baking powder together.
  3. In a separate bowl, cream together the softened butter and white sugar until smooth and fluffy.
  4. Beat in the egg, and then stir in the vanilla and almond extracts.
  5. Gradually blend in the dry mixture until fully incorporated.
  6. Roll rounded teaspoonfuls of dough into balls and place them on ungreased baking sheets.
  7. Gently flatten each ball to about 1/4 inch thickness.
Baking
  1. Bake for 8-10 minutes or until golden around the edges.
  2. Let the cookies cool completely on a wire rack before spreading frosting.
Assembly
  1. Spread a layer of frosting on each cookie base.
  2. Decorate with an assortment of fresh fruits.
  3. Serve right away to enjoy their beauty and flavor!

Notes

Storage for assembled cookies: Keep in an airtight container in the fridge for up to two days. For freezing, freeze plain cookies only.
