Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix the flour, baking soda, and baking powder together.
- In a separate bowl, cream together the softened butter and white sugar until smooth and fluffy.
- Beat in the egg, and then stir in the vanilla and almond extracts.
- Gradually blend in the dry mixture until fully incorporated.
- Roll rounded teaspoonfuls of dough into balls and place them on ungreased baking sheets.
- Gently flatten each ball to about 1/4 inch thickness.
Baking
- Bake for 8-10 minutes or until golden around the edges.
- Let the cookies cool completely on a wire rack before spreading frosting.
Assembly
- Spread a layer of frosting on each cookie base.
- Decorate with an assortment of fresh fruits.

Storage for assembled cookies: Keep in an airtight container in the fridge for up to two days. For freezing, freeze plain cookies only.
