  • 1 cup cucumbers Chopped.
  • 1 bell peppers Chopped (any color).
  • ¼ cup olive oil For dressing.
  • 2 tablespoons vinegar Any type (balsamic or red wine recommended).
  • to taste salt To enhance flavors.
  • to taste pepper Freshly ground preferred.
Optional Ingredients
  • 1 cup cooked chicken For added protein.
  • 1 cup pasta Cooked, for a pasta salad variant.
  • 1 cup fruits Berries, peaches, or your choice.
  • nuts or seeds Optional for added crunch.

Preparation
  1. Wash and chop all the vegetables and fruits. Start by rinsing your greens and other veggies under cold water. Then, chop them into bite-sized pieces.
  2. If you’re making a pasta salad, cook pasta according to package instructions until al dente, then drain and allow to cool.
  3. In a large bowl, combine mixed greens, chopped veggies, and any optional ingredients like cooked chicken or fruits.
  4. Drizzle the mixture with olive oil and vinegar, and season with salt and pepper to taste.
  5. Gently toss all the ingredients until well combined, and serve fresh as a side dish or a refreshing main course.

Notes

For variety, consider roasting your vegetables for added sweetness, and use creamy dressings or avocado for richness. Store leftovers in an airtight container in the refrigerator and consume within 2-3 days.
