  • ½ cup soy sauce Soy sauce gives depth and saltiness.
  • cup brown sugar Brown sugar balances the savory flavors.
  • ½ cup ketchup Can be replaced or omitted.
  • 3 cloves garlic minced Garlic adds warmth and aroma.
  • 1 tablespoon ginger Adds a nice flavor.
  • 1 tablespoon cornstarch (optional) For thickening sauce if desired.
  • 2 tablespoons water (if thickening)
Optional Ingredients
  • 1 bell pepper sliced Add if desired.
  • 1 onion sliced Add if desired.
  • ½ teaspoon chili flakes For an extra kick.

Method
 

Preparation
  1. Place chicken in the crock pot in an even layer.
  2. In a bowl, mix soy sauce, brown sugar, ketchup, garlic, and ginger.
  3. Pour the sauce over the chicken and coat well.
  4. Add pineapple chunks and juice over the chicken.
  5. Add bell peppers or onions if desired.
Cooking
  1. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours.
  2. Chicken should be tender and easy to shred.
Final Steps
  1. Shred chicken or leave in pieces. Stir well with sauce.
  2. Mix cornstarch with water and add to the crock pot. Cook for 10 to 15 more minutes if thickening.
  3. Top with green onions and sesame seeds before serving.

Notes

Do not skip pineapple juice as it helps build flavor. Chicken thighs stay more tender than chicken breasts. Avoid overcooking even in slow cooker mode.
