- If using dried tamarind, soak the pulp in 2 cups of hot water for about 30 minutes. Skip this step if using fresh tamarind.
- In a blender, combine the soaked tamarind water (including pulp) with the diced mango. Blend until smooth.
- Pour the blended mixture through a fine mesh strainer into a pitcher, using a spatula to extract all the juice while leaving behind any solid pieces.
- Add the remaining 2 cups of cold water to your tamarind and mango mixture. Stir in the sugar and a pinch of salt, adjusting to your taste preferences.
- Refrigerate for at least one hour to let the flavors meld.
- Serve over ice cubes in chilled glasses and enjoy.
