Preparation and Cooking
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Stir in chopped roasted red peppers, vegetable broth, oregano, paprika, salt, and pepper. Bring to a simmer for about 5 minutes.
- Place tilapia fillets in a baking dish and pour the roasted pepper sauce over the fish, coating well.
- Bake in the oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, do so before baking, and it can last up to 3 months. Prepare the sauce a day in advance for make-ahead options.
