  • 4 fillets tilapia fillets
  • 2 medium roasted red peppers, chopped
  • 3 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation and Cooking
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in chopped roasted red peppers, vegetable broth, oregano, paprika, salt, and pepper. Bring to a simmer for about 5 minutes.
  4. Place tilapia fillets in a baking dish and pour the roasted pepper sauce over the fish, coating well.
  5. Bake in the oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
  6. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, do so before baking, and it can last up to 3 months. Prepare the sauce a day in advance for make-ahead options.
