Ingredients
  

For the Bowl
  • 8 cups Crispy frozen tater tots Use a standard frozen bag, about 2 cups of tots per bowl.
  • 8 large Fresh eggs Count 2 to 3 eggs per bowl depending on appetite.
  • 2 cups Beef sausage gravy 1/2 to 3/4 cup of gravy per bowl.
  • 1 cup Shredded cheese (optional) Use sharp cheddar, Monterey Jack, or pepper jack.
  • to taste Salt and pepper Fine sea salt and freshly cracked black pepper.

Method
 

Preparation
  1. Preheat the oven and cook the tater tots according to package instructions until crispy.
  2. In a skillet, prepare the beef sausage gravy.
  3. Scramble the eggs in another pan, seasoned with salt and pepper.
  4. In a bowl, layer the crispy tater tots, followed by scrambled eggs, and pour the sausage gravy over the top.
  5. Add cheese if desired, and serve hot.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat the gravy and eggs separately and crisp the tots in a toaster oven or skillet to avoid sogginess.
