Salad Ingredients
  • 7 to 8 cups seedless watermelon, cut into ¾ inch cubes
  • 1 ½ cups fresh blueberries
  • 1 cup crumbled feta cheese
  • Fresh mint and basil leaves, thinly sliced
  • 1 tablespoon extra virgin olive oil (Optional) If omitted, add an additional tablespoon of fresh lime juice.
  • 1 to 2 tablespoons honey
  • Pinch salt

Method
 

Preparation
  1. In a jar or bowl, combine the fresh lime juice, olive oil, honey, and a pinch of salt. Whisk or shake until well blended to prepare the dressing.
  2. In a large mixing bowl, combine the cubed watermelon, blueberries, thinly sliced mint and basil, and ¾ cup of the crumbled feta cheese.
  3. Drizzle the honey lime dressing over the watermelon mixture. Gently toss everything together to ensure an even coating without over-mixing.
  4. Top with the remaining ¼ cup of feta cheese and garnish with additional fresh herbs before serving.

Notes

For a twist, try adding other fruits like mango or kiwi. Store leftovers in an airtight container for up to 2 days, but consume fresh for best results. Not suitable for freezing due to high water content in watermelon.
