  • 1 medium bell pepper, diced
  • ½ medium red onion, diced
  • 1 cup corn (fresh or frozen)
  • ¼ cup fresh cilantro, chopped
Dressing Ingredients
  • 2 medium limes, juiced
  • 3 tablespoons olive oil
  • 1 teaspoon cumin
  • to taste salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the black beans, kidney beans, cherry tomatoes, diced bell pepper, red onion, corn, and cilantro.
Making the Dressing
  1. In a small bowl, whisk together the lime juice, olive oil, cumin, and season with salt and pepper.
Combining and Serving
  1. Pour the dressing over the bean salad mixture and toss to ensure everything is evenly coated.
  2. Allow the salad to sit for at least 30 minutes to let the flavors meld together.
  3. Serve chilled or at room temperature.
