Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sliced peaches and raspberries. Add in the sugar and lemon juice, stirring gently until mixed.
- In another bowl, whisk together the flour, baking powder, and salt. Then, add in the milk, melted butter, and vanilla extract, stirring until smooth.
- Pour the fruit mixture into a greased baking dish. Pour the batter over the top of the fruit without stirring.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown.
- Allow to cool slightly before serving.
Notes
Avoid overmixing the batter; a few lumps are okay. Let the cobbler rest after baking to help it set and make serving easier. This dessert can be elevated with sides like whipped cream or ice cream.
